After attending culinary school\, Ulrika worked at restaurants in Sweden before she came to New York City where she fell in love with the vibrant melting pot of world cuisines. In 1990\, she joined the staff at the prestigious Swedish restaurant Aquavit where she gained invaluable experience before accepting a position cooking for the Swedish Consulate General with a focus on introducing American businesses to Sweden. Fueled by her passion for authentic Swedish cuisine\, Ulrika opened her restaurant\, Ulrika’s\, on the Upper Eastside of Manhattan in 1999. The establishment embraced the Farm to Fork concept\, a notion close to Ulrika’s heart since her childhood\, emphasizing the importance of knowing where food comes from. Ulrika’s most recent venture is the Björk Café & Bistro at Scandinavia House on Park Avenue which opened in the Fall of 2022. ASHM is thrilled to honor Ulrika with our Outstanding Achievement Award\, and we look forward to many more of her culinary accomplishments.

SUMMARY:Trillium and Wine: Complementary Pairings
DESCRIPTION:Great wine and food pairings either emphasize the similarities or highlight the differences between the two. Dr. Raguso studies the floral scents of native plant species\, including trilliums\, a core collection at Mt. Cuba. Trilliums are noteworthy for not smelling like conventional flowers\, with fragrances that evoke wine\, cheese\, fruit\, and spices. He has assembled a “flight” of Mt. Cuba trilliums and several wines that complement their woodsy aroma. Explore the chemistry and ecological value of various trillium scents and take note of the pairings you like. (Ages 21 and over)\nThis program takes place in person at Mt. Cuba Center on Saturday\, April 27\, 2024.\nAbout the Instructor:\nRobert Raguso\, PhD\, is a professor of Chemical Ecology at Cornell University. His research interests run the spectrum of insect-plant interactions mediated by chemistry\, especially the role of fragrance in pollination ecology and animal behavior. He has promoted his research by organizing symposia\, short courses\, and workshops world-wide.
