Recipe: Strawberry Bruschetta

Ingredients:

  • 1 pint strawberries
  • 1 handful of basil leaves
  • 6 oz. mascarpone cheese
  • 2 tbsp. honey
  • 3 tsp. balsamic
  • 1 baguette (Metropolitan Bakery)
  • 1/4 cup olive oil

Directions

  1. Cut and remove the green, leafy top of the strawberries. Add the balsamic vinegar to the strawberries and let the mixture marinate in the fridge. Slice basil leaves lengthwise, in thin strips. Set aside. Mix together mascarpone and honey, and put in the fridge. 
  2. Set the oven to broil. Slice the baguette. Brush the cut pieces with a little bit of olive oil. Broil until toasted (roughly two minutes).
    Spread mascarpone-honey mixture on the bread. Spoon a bit of strawberry-vinegar mixture on top and sprinkle with a few pieces of cut basil. Enjoy!
